No-Bake Peanut Butter Treats!

Yaaas, another (non?) cooking blog post. Today I thought I'd share my delicious bites of peanutty goodness... I am not even kidding, they are amazing! Oh and the best thing, you don't even need measurements or an oven to make them!

You will need:
Cling film
Pyrex dish
Digestive biscuits
Butter
Peanut butter (smooth)
Chocolate

So first we are going to start by making the buttery base. To do this just break up as many digestives as you want, I used just over half a packet. Once they are like breadcrumbs melt some butter and add that to the biscuit crumbs. For the amount of biscuits I used I melted around 4/5 table spoons of butter. Once it is all mixed add it to the cling film covered dish (this make it easier to get them out of the container when they are ready to serve).

No measurements are need for this recipe so you can make it to your own taste. Want more of a chocolatey bite? Use more chocolate and less biscuit! It is totally up to you.

So now we've got our base its time to pop that in the fridge for 5 minutes. Whilst that is hardening up a tad we can melt our peanut butter. Just melt it ever so slightly so it is easier to spread. I used a (small) full jar for this step. Once the base has hardened slightly add the peanut butter on top and pop it back into the fridge for around 8/10 minutes.

It is then just a case of melting the choc and adding that on top of our delish biscuit and peanut butter base. I melted around 3 small bars for the topping, I like it super chocolatey. Again (don't worry its the last time, haha) pop it into the fridge for about 15 minutes, just to make sure everything is set before we cut it up into bite size pieces.


So, thats it! These are amazing little treat to make for naughty snacks or for a party! If you can't eat peanuts due to an allergy, why not try it with caramel instead!

Sweet Mango & Falafel Wraps.

Right, so I am still getting to grips with my new laptop and some where along the way I managed to delete a few blog posts. I've had my little strop (mwhaha) and now I am ready to re-write them. So on with the post! 
A while ago I bought this mango, salad, falafel wrap thing from Tesco, and it was the best thing I had ever eaten...well, the best wrap I had ever eaten. I decided to recreate something similar and it turned out amazing! 

To make it you will need:
-Wraps
-Peppery rocket
-Falafels (sweet potato or spinach ones, whichever you prefer)
-Mango chutney
-A pinch of pepper

First, I just throw (not literally) the falafels into the oven. I like these ones, you just put them into the oven for 18 minutes on fan 180°C, gas 6 or 200°C depending on what kind of oven you have. Easy peasy!

Whilst the falafels are cooking I like to prep my wrap. I place a handful of washed, peppery rocket onto the centre of the wrap, adding a generous helping of tangy mango chutney and a sprinkle of crushed pepper.

When the falafels are a dark, golden brown colour I tear them in half adding them to the pre-prepared wrap. 
Simply fold, serve and enjoy! I am going to be honest, they don't really look like much but they taste delish!

Snack Time!

To switch up my blog posts a bit i thought i would share a few of my favorite snacks to make.



The first one is what i reach for if i fancy something sweet after my tea. It is made up of yogurt, berries and honey. To throw this together i just empty a pot of yogurt into a bowl, add my washed berries (whatever i have in the fridge) and drizzle some honey on top to make it even sweeter! It is so easy and healthy too.

The next kind of snack is if i get hungry in between meals. It's just some hummus with a wholemeal pitta bread and green olives. Olives are my latest muse, I never thought i liked them for some reason but i recently tried them again and i actually love them! 

My final favorite snack is the traditional tea and biscuits. I usually have coffee throughout the day but in the evening i love a cup of tea and a few biscuits. This is definitely the inner granny coming out in me, haha!  

So this is what i have been reaching out to eat recently, healthy and not so healthy but all equally as good as each other!
